A flatfish, from the family related to the turbot. The brill lives at a depth of 5 to 50 metres and can grow to about 75cm long in warm habitats. As a true fish of prey it feeds on smaller fish and other marine animals.
Brill is often used in fish soup or composite fish-dishes, but also as a main course, the nutricious flavour of this flatfish is appreciated more and more. Fried or grilled – on the barbecue – it is a real delicacy.
