Dab belongs, as do plaice and sole, to the flatfish family. It is not very large: up to
40cm, and prefers to live in a moderate climate. Dabs live on shellfish and worms.
As to flavour, dab is like sole, although dab is somewhat more low-fat. In Japan they are wild about it, and in the Netherlands too, dab is gaining in the culinary domain. Fried, braised or smoked, it is recommended in all forms!
